The Nitrate and Nitrite Myth: Another Reason not to Fear Bacon

Having never feared bacon in my entire life this article did not have a huge impact on me.  I gotta say though it is kinda nice to have the nitrate issue reduced to never a thought more.  My readers, and anyone stopping by, who does fear bacon – (because of the nitrates and not the fat) may find it interesting.  If you fear bacon because of the fat you need Bacon 101. It is in here somewhere. I just have to locate it and publish it. Stay tuned as the Fat part cometh.

    I recently read how bad nitrates/nitrites are for you and now I read this to say its fine!! AArghh!! I wish someone impartial and trustworthy would investigate all these things and let everyone know.

      It can definitely be confusing. At some point you hopefully get enough information and put it together and come to the conclusion that is acceptable to you. It makes sense to me. I do not eat a lot of preocessedmmeats and never been too concerned about those nitrates in particular.
